Description
Traditional elaboration with destemming, alcoholic fermentation in stainless steel tanks and temperature control. Daily remontage and pumping over, and long macerations after fermentation. As a result, we obtain richly concentrated wines, optimal for malolactic fermentation in oak barrels. A min. 24 month ageing in American and French oak barrels, followed by at least 36 months in the bottle.
