`Lalama` Red Ribeira Sacra 2016

A blend of 90% Mencía and 10% Brancellao, Mouratón, Sousón and Garnacha, aged between 20 and 100 years old. The grapes were hand-harvested and sorted both in the vineyard and again once in the winery. The fruit was cooled to 2ºC for 24 hours, destemmed then macerated for two days. Fermentation took place using indigenous yeasts in 25, 35 and 45 hectolitre wooden tanks, with daily punch-downs. The wine was then transferred to 300 litre old oak barrels. This has wonderful fragrance and sappy, redcurrant freshness with lifted aromas of wild herbs and a complex savoury character.
