Tío Diego Amontillado Pago de Macharnudo

This Amontillado is the older brother of the Fino ‘Inocente’, as the ‘Inocente’ solera feeds into the ‘Tío Diego’ solera. The flor yeast which floats on the top of Fino sherry and protects it from oxidation breaks down at this stage and the Amontillado is aged in contact with oxygen. The average age of the final Sherry is over 20 years at the time of bottling. Aromas of hazelnuts, dried fruits and caramel complement the notes of freshly baked bread and apple.
