Description
The fruit for El Terroir is sourced from deep limestone soils. The name is a nod to the area’s soils, which Enrique and Elisa believe define the wine’s earthy profile. Each of the 27 different plots is vinified separately in open-top barrels and vats. They define their winemaking as ‘hands off’, with just one punch down, if any, to ensure a delicate extraction. The wine is then aged for 12-14 months in a mix of 500-1500 litre French oak (only 8% new). Aromas of juniper, wild herbs, pepper spice. A juicy core of raspberry fruit is tempered by structured acidity.
